人的身体就好比一台机器,机器缺了油就会停止运转,人的身体如果没有维生素及蛋白质、脂肪、糖、钙、磷、铁等多种营养元素来源源不断补充,就难以生存。当然,上述的营养元素大部分可以从鸡、鱼、肉、蛋或水果中得到,可是从我们目前的生活水平来看,人体需要的维生素主要还是来自蔬菜。

什么叫蔬菜呢?简单地说,蔬菜就是可以做菜吃的草本植物。它以十字花科和葫芦科的植物居多。我们常吃的,如白菜、菠菜、芹菜、胡萝卜、黄瓜、辣椒、西红柿等,统称之为蔬菜。它们都含有丰富的营养,但又有各自的特点--各种维生素的含量不同,就胡萝卜素来说,同样都是100克蔬菜,菠菜含有3.87毫克,胡萝卜含有3.67毫克,鲜蒜头则是空白。

我们在日常生活中,不但要多吃蔬菜,更需要了解它们。这是因为人体一旦少了某一种营养元素,就会导致疾病的发生。你有贫病吗?请经常食用菠菜,因为菠菜含有不少的维生素B6,而维生素B6可以起到医治贫病的作用。此外,它还含有为数不少的其他维生素B以及钙、磷等营养成分。你的胃口不佳,食欲减退吗?就请食用适量的鲜蒜头,因为它含有维生素B1。据介绍,每100克的鲜蒜头就有0.24毫克的维生素B1,而它的功能是帮助消化的。因此,适当地吃些鲜蒜头就可以增加食欲。你想使自己的伤口尽快愈合吗?请适量地吃些辣椒。因为辣椒含有数量惊人的维生素C.据科学统计,每100克的辣椒就含有185毫克的维生素C,它比其他蔬菜的含量要多好几倍。你患有夜盲症或干眼吗?就请常吃些胡萝卜。因为它含有比较多的胡萝卜素,而胡萝卜素在人体这个特定的环境中,可转化成维生素A,这对夜盲症、干眼病有很好的疗效。以上这些都说明了蔬菜是良药。

古人说:问渠哪得清如许,为有源头活水来。诗句告诉我们,水清,在于有源头活水,同样道理,人体健康,也必须靠多种维生素来补充。因此,即使是一个身体健康的人,在日常生活中也必须尽可能吃多种蔬菜。然而有些人不吃带药味的蔬菜,如芹菜;也有一些人不吃带辣味的,如辣椒;更有一些人不吃带酸味的,如西红柿。另外,还有一些人对合口味的蔬菜,连吃数餐、数日,甚至到吃厌为止。这些都是挑食、偏食的弊病,它不能提供肌体所需的多种维生素,应该尽量克服。

蔬菜是人们一日三餐中不可缺少的,如能食用多样化,那得到的将是健康长寿。
