元宵节,北方人要吃元宵。说到元宵,不少人以为汤圆就是元宵。其实元宵和汤圆尽管在原料、外形上差别不大,实际是两种东西。最本质的区别在于制作工艺上。做汤圆相对简单,一般是先将糯米粉用水调和成皮,然后将馅“包”好即成。而元宵在制作上要繁琐得多:首先需将面和好,把凝固的馅切成小块,过一遍水后,再扔进盛满糯米面的笸箩内滚,一边滚一边洒水,直到馅料沾满糯米面滚成圆球方才大功告成。
